Chilli noodles with vegetables

This recipe, based on one in Vatch's Thai Street Food, by Vatcharin Bhumichitr (Kyle Cathie, 2002), has a similar structure, but is flavoured with chilli and garlic instead of sesame oil and sesame seeds. Another difference is that the vegetables are not stirfried first, but are added raw at the end, which makes this dish almost a salad.
- Bring a large saucepan of water to the boil and cook the noodles according to the package directions - about 3 minutes. Drain, rinse in cold water and drain again.
- In a stirfry pan, heat the oil until a haze appears. Add the garlic(finely chopped) and fry for 2 seconds, then add the chilli and fry for another 2 seconds.
- Add the noodles, stir to prevent sticking, then add all the remaining ingredients, stirring quickly. Turn out onto a serving dish.
