Blue cheese and lettuce sandwiches
White bread sandwiches filled with soft leaves and creamy blue cheese make another delicious little lunch for a sunny day.
- Cut the cheese into small dice and put into a bowl with the cream or olive oil. Mash with a fork to make a moist, lumpy mixture.
- Wash and dry the lettuce and put into a bowl. Add the cheese mixture and toss gently until evenly mixed.
- Place 2 slices of bread on a board and cover with the lettuce and cheese mixture. Cover with the remaining 2 slices and press down gently.
- Cut each sandwich into 4 triangles.
