Oranges in caramel syrup
Oranges with caramel have become a classic combination and make a refreshing dessert.
- Peel the oranges with a sharp knife, removing all the white pith. Slice each orange into about 5-6 slices and place in a glass bowl. Take a heavy-based pan and add the sugar. Stir in the half cup of water. Put the pan over a gentle heat and allow the sugar to completely melt before it reaches boiling point. Be sure to wash down any crystals that cling to the side of the pan.
- Simmer the melted sugar, watching as it becomes dense with bubbles. The edges will start to caramelise, so shake the pan gently and swirl it around so the sugar caramelises evenly. When it reaches the colour of golden syrup, take it from the heat and add the boiling water(1 cup). (It will be extremely hot so take care to protect your arms, the cat and the children.) Let the caramel syrup cool a little before pouring it over the orange slices.
