Sardines on pasta

Canned sardines or tuna with a kick of chilli are the stars of this easy and nutritious pasta meal.
- Cook the pasta (bucatini or spaghetti) in a large pan of simmering, salted water until tender, but firm to the bite.
- Meanwhile, heat the olive oil in a large frying pan over a low heat, and add the garlic(smashed), capers(rinsed), chilli or cayenne and anchovy fillets(chopped). Stir to combine. Add the chopped tomatoes, stir and simmer for 5 minutes.
- When the pasta is almost ready, drain the sardines and roughly chop. Add to the sauce and gently heat through. Drain the pasta, reserving a few spoonfuls of the cooking water, and add the pasta to the sauce, tossing well.
- If the mixture seems a little dry, add the reserved hot pasta water. Scatter with the toasted pine nuts and torn parsley. Serve in warm pasta bowls.
