Another of Perry's easy, friendly recipes is a simple pumpkin puree, which would be a delicious alternative to roast pumpkin in the shared meal he describes. If you are using salted butter, reduce the quantity of salt in the recipe.
- Put the pumpkin (peeled and diced) in a saucepan with enough cold water to reach to just below the top of the pumpkin.
- Add 2 tablespoons sea salt and simmer until soft. Do not drain off the small amount of liquid remaining in the saucepan. Set aside.
- Meanwhile, heat 50g butter in a heavy saucepan, add the onion and 1½ teaspoons salt and sauté over a low heat for 5 minutes.
- Add the pumpkin and remaining liquid and cook another 2 minutes. Puree using a stick blender and stir in 25g unsalted butter. Check the seasoning.
