
Pear and walnut salad with toasted sesame dressing
( SERVES 4 )

The pears in this salad need to be ripe but firm; for a well-balanced lunch, add a large slice of grilled haloumi cheese.
Ingredients
4 cups | Salad leaves |
1 bunch | Radishes, trimmed and sliced into wedges |
2 | Spring onions |
3 | Pears, quartered, cored and sliced |
75 g | Walnuts, chopped into large pieces |
Toasted sesame dressing
¼ cup | Olive oil, mild |
2 tsp | Toasted sesame oil |
2 tsp | Cider vinegar |
1½ Tbsp | Soy sauce |
Directions
- Wash the lettuce leaves in plenty of water and dry in a salad spinner or drain well, then tear into bite-sized pieces. Place all the ingredients in a large bowl. To serve, add several tablespoons of dressing and gently toss to coat.
- To make the dressing, put all ingredients in a small jar and shake well.
