Pear and walnut salad with toasted sesame dressing

Pear and walnut salad with toasted sesame dressing

The pears in this salad need to be ripe but firm; for a well-balanced lunch, add a large slice of grilled haloumi cheese.

Ingredients

4 cups Salad leaves
1 bunch Radishes, trimmed and sliced into wedges
2 Spring onions
3 Pears, quartered, cored and sliced
75 g Walnuts, chopped into large pieces

Toasted sesame dressing

¼ cup Olive oil, mild
2 tsp Toasted sesame oil
2 tsp Cider vinegar
1½ Tbsp Soy sauce

Directions

  1. Wash the lettuce leaves in plenty of water and dry in a salad spinner or drain well, then tear into bite-sized pieces. Place all the ingredients in a large bowl. To serve, add several tablespoons of dressing and gently toss to coat.
  2. To make the dressing, put all ingredients in a small jar and shake well.
