Crystallised lemon peel
- Sqeeze and half the lemon. Use a teaspoon to scrape out the membranes inside the lemon halves. Put into a saucepan of water and simmer for 40 minutes until the skin is very tender.
- Drain, cool and cut the lemon skins into thin strips. Slowly bring to the boil in a small saucepan the quarter-cup of sugar and quarter-cup of water. Simmer to form a syrup, then add the strips of lemon skin. Simmer for 30 minutes, watching carefully so that the syrup does not burn.
- Drain excess syrup and spread lemon strips on a plate spread with caster sugar. Coat lemon strips with the sugar and leave to harden in a warm, dry place.
