Sardine and onion sandwich with cucumber
- Open the can of sardines and drain off the oil. Put in a small bowl and mash lightly.
- Stir in the red onion (finely chopped), tabasco, juice of a lemon or lime (a good squeeze) and coriander leaves.
- Pile into a small bowl and put on the table with cucumber (cut lengthways into wedges), and bread and butter. Each person can assemble their own sandwich
Canned fish is another pantry staple for people who lunch at home. Cans of tuna in oil, red salmon and also sardines can also be used to make a salad or sandwich, or tuna in hot parsley sauce, served on toast.
