Don't let the name put you off. Carefully made sloppy joes are delicious and unlike most recipes using mince, this mixture doesn't need to be simmered for an hour before serving. When the mince is nicely browned, add a small amount of tomato sauce and a splash of water. As soon as the mixture comes together, it is ready to serve.
- Melt the butter or oil in a heavy frying pan and add the onion, celery and capsicum (all finely diced, and the capsicum peeled). Fry over a moderate heat until the onion is translucent.
- Add the minced beef and raise the heat. Break up lumps in the meat using a wooden spoon and fry until the meat starts to brown. Season with salt, pepper and Tabasco or chilli powder. Add the tomato sauce and moisten with a little water. Simmer for a few minutes, then add the parsley and spoon onto toasted burger buns.
