Sliced egg salad
Easiest of all, and great with salmon, is a salad of sliced hard-boiled eggs, smothered with mayonnaise flavoured with curry powder and scattered with herbs such as chives and parsley.

|2 Tbsp||Fresh herbs, such as fresh parsley and chives, finely cut|
- Place the eggs in plenty of cold water in a pot. When the water starts to boil, cover the pot and leave for 8 minutes. Peel and slice the eggs into a dish.
- While the eggs are cooking, mix the cream, mayonnaise and curry powder in a bowl, then pour over the sliced eggs. Scatter with herbs such as parsley and chives, finely chopped.
