Adam's vanilla bean panna cotta
A romantic meal doesn't need to be complicated. This simple but delicious panna cotta with poached fruit is sure to impress.
- In a small saucepan, boil the cream, sugar and rum.
- Split the vanilla pod down the middle to let all the seeds escape and add the pods and the seeds to the cream. Simmer over a low heat for two minutes, stirring all the time. Remove from the heat and mix in the soaked gelatine(soak in 1 tablespoon cold water).
- Stir to dissolve and pass through a fine sieve while the mixture is still hot. Pour into one small or two very small bowls, stirring so that the seeds are distributed evenly. Cover with plastic wrap and chill in the fridge until set. This will take at least 2 hours.
- To serve, run the outside of the bowl or bowls under hot water, then use your finger to gently ease the panna cotta out of the bowls onto a shallow dish or dishes. Serve with cold poached fruit and a little of the poaching syrup. Serves 2 generously.
