Walnut meal is available from most delis and some supermarkets. The texture of the finely ground walnuts is similar to that of ground almonds.

Ingredients

175 g Butter
½ cup Icing sugar
½ tsp Vanilla essence/extract
¾ cup Standard flour
¾ cup Walnut meal

Directions

  1. Preheat oven to 180 degC.
  2. Line an oven tray with baking paper.
  3. Cream butter, icing sugar and vanilla until creamy. Sift in flour. Add walnut meal. Mix well.
  4. Take teaspoons of dough and roll into balls. Place on the prepared tray. Flatten gently with a small fork.
  5. Bake for about 15 minutes or until lightly golden.
  6. Cool on a wire rack. When cool, dust with icing sugar.
