Parmesan & pumpkin fritters

- Combine lightly beaten egg, milk and cheese in a bowl. Add pumpkin.
- Sift flour, baking powder, salt and pepper over top and mix well.
- Heat Canola or rice bran oil in large frying pan on medium-high.
- Fry heaped tablespoons of the mixture until golden on both sides and cooked in centre.
Tip: Excellent served with steamed greens or crunchy salad and chutneys.
