Lemon posset with berries
One of the simplest desserts, it takes just minutes to make.
- In a saucepan, slowly heat the cream and sugar until it boils, stirring to dissolve the sugar. Boil for 3 minutes, stirring occasionally.
- Remove from the heat, whisk in the lemon juice and leave to settle. Pour into 4 small glasses. Cool.
- Cover and refrigerate for 2 hours. Decorate the possets with the raspberries.
