Greek country salad

Ingredients

1 Cucumber
4 Tomatoes
½ tsp Sugar
1 to taste Salt
2 cups Salad greens
2 Red onions
15 Kalamata olives
250 g Feta
2 Tbsp Capers
3 tsp Oregano
4 Tbsp Flat leaf (Italian) parsley
5 Extra virgin olive oil
1 Lemon

Directions

  1. Trim and peel the cucumber. Cut in half lengthways, then into 1cm slices to make half moons. Cut the tomatoes into neat wedges. Combine the cucumber and tomato, sprinkle with the sugar and salt and set aside for 10 minutes.
  2. Gently combine the salad leaves, onion rings, olives and feta (broken into bite-sized pieces) on a large serving platter. Add the tomato/cucumber mixture and the capers (rinsed) and chopped herbs.
  3. Finally, add the oil, the zest and juice of a lemon and gently tumble together. Serve at once.
