Warm red cabbage, goat cheese and walnut salad

|2 Tbsp||Chives, finely chopped|
|1 Tbsp||Red onion, very finely sliced|
|2 Tbsp||Walnut oil|
|100 g||Goat's cheese, soft|
|200 g||Red cabbage, finely sliced|
|1 Tbsp||Olive oil|
|1||Granny smith apple, quartered and finely sliced|
|40 g||Walnuts, toasted then chopped|
|1 Tbsp||Walnut oil|
|1 Tbsp||Balsamic vinegar|
|1||Salt & freshly ground pepper, to season|
- Crumble the cheese into a bowl. Add the chives, walnut oil and red onion.
- Heat the olive oil in a pan then when hot, add the cabbage, apples and walnuts. Stir for 5 minutes then reduce the heat and add the walnut oil, balsamic and seasoning.
- Simmer for two minutes, then add all the ingredients together and serve warm.
