Sesame, pineapple and cucumber salad

|2 cups||Cucumbers, (diced)|
|2 cups||Pineapples, (diced)|
|3||Limes, (zested and juiced)|
|1 Tbsp||Toasted sesame seeds|
|2 Tbsp||Mint leaves, (shredded)|
- Put the cucumber and pineapple into a bowl.
- Add the lime juice and zest, then the sesame seeds and fresh mint leaves. Stir to combine.
- To make the dressing, put all the ingredients into a bowl over a saucepan of simmering water.
- Gently stir until the sugar has melted and the flavours have combined, then spoon over the salad with extra sesame seeds and mint leaves to garnish
