Avocado waffles with chilli and lemon

Avocado waffles with chilli and lemon

Waffle mix

4 Tbsp Butter, melted
1¾ cups Self raising flour
½ tsp Salt
2 cups Milk
½ cup Cornflour
2 Eggs

Ingredients

2 Avocados
1 Tbsp Olive oil
3 Lemons
4 Free-range eggs
4 tsp Chilli sauce
8 Bacon rashers, or smoked salmon or grilled chorizo

Directions

  1. To make the waffles, beat the eggs well then whisk in the milk, flour, cornflour, salt and melted butter until smooth.
  2. Pour into hot waffle irons.
  3. Slice the avocados and squeeze over the juice of 1 lemon.
  4. Heat the olive oil and fry the eggs. Spoon over the chilli sauce before layering between the waffles with the avocado.
  5. Add bacon, smoked salmon or grilled chorizo with a sprinkling of pepper. Offer sour cream and wedges of lemon.

    You don't need to do waffles for this combo. Vogels toast is an excellent base
