Pico de gallo (Salsa fresca)

Pico de gallo is also known as salsa fresca, salsa bandera or salsa Mexican. The salsa can be made in advance and will hold for up to 4 hours. You can also add whole kernel corn if desired.

This recipe has been supplied by Grace Ramirez who took part in the first American series of MasterChef.  Although she is Venezuelan. she says she is Mexican at heart because of the amount of time she's spent in that beautiful country.

Ingredients

4 Tomatoes, seeded
1 cup Onion
1 bunch Fresh coriander
2 Tbsp Lime juice
1 serving Salt and freshly ground black pepper, to taste

Directions

  1. Chop the tomatoes and onions into small dices. Finely chop the coriander. 
  2. Mix all the ingredients. Add salt, pepper to taste and lime juice. 
  3. Cover and chill for at least 30 minutes until flavours blend.

    add Jalapenos to give it a 'bite'. I also make Guacamole using this as well. This is so simple, yet so divine.
