Nam Prik Ong
- In a small food processor bowl, blitz the chillies, shallots, galangal, salt, garlic and shrimp paste.
- Tip out into a glass mixing bowl, work in the pork mince and coriander.
- In a wok, heat the cooking oil. cook the 3 cloves garlic, peeled and chopped. Add the pork mixture, then add 3 tbsp water and 2 tbsp sugar.
- Stir occasionally for five minutes, add the tomatoes, continue to cook for 10 minutes.
- Remove from the heat and transfer to a bowl to cool.
