Chargrilled chicken, blood orange and asparagus
For a barbecue dish with a difference, try this chicken coloured with brilliant blood orange and fresh asparagus.
- Preheat the grill. Brush the asparagus and chicken lightly with olive oil. Season well.
- Grill the chicken for approximately five minutes on each side, depending on size - until golden and crispy. Grill the asparagus for two to three minutes, turning until cooked - again depending on size.
- Whisk together the garlic, sugar, juice, oil and thyme. Taste for seasoning. Peel and segment the oranges. Plate the asparagus, chicken and oranges. Drizzle with the dressing before serving.
