Chocolate olive oil mousse
- In a mixing bowl over simmering water, melt chocolate then slowly stir in oil. Set aside.
- In another bowl, beat egg yolks with 125g sugar until fluffy.
- Mix chocolate mixture into the egg mixture and stir in triple sec.
- In a bowl, whip egg whites and salt until stiff and continue whipping, adding remaining sugar until incorporated.
- Fold whites into chocolate mixture, pour into dishes and chill for four hours.
