Tarragon tuna melt

|½ cup||Tuna in spring water|
|1 tsp||Dijon mustard|
|1 tsp||Tarragon, finely chopped|
|2 tsp||Flat leaf (Italian) parsley, finely chopped|
|3 tsp||Spring onions, finely chopped|
|1 to taste||Salt & freshly ground pepper|
|2||Ciabatta bread, rolls|
|1 to serve||Butter|
|1 to serve||Tomato, sliced|
|1 to serve||Spinach leaves|
|1 to serve||Cheddar cheese, sliced|
- In a bowl, mix together the mayonnaise, tuna, mustard, tarragon, parsley and spring onion. Season.
- Preheat oven to 200C. Slice the rolls and spread with butter. Fill the rolls generously with spinach leaves, slices of tomato, the tuna mixture and cheese.
- Place on a tray and bake for 10-15 minutes or until the cheese has melted.
