Sambal oelek (The basic sambal)

Ingredients

20 large Red chillies
2 tsp Salt

Directions

  1. Slit the chillies open lengthwise. Leave the seeds in if you want it very hot, or rinse them out if not. 
  2. Finely chop the flesh.
  3. Using a pestle and mortar, pound the chillies and salt together until smooth.
