Ginger and chilli chicken skewers
|4||Boneless chicken thighs, sliced|
|⅓ cup||Oyster sauce|
|2||Red chillies, chopped|
|2 Tbsp||Shaoxing wine, chinese cooking wine|
|1 clove||Garlic, crushed|
|¼ cup||Fresh coriander, chopped|
Peanut and mint dipping sauce
- To make the dipping sauce, place the lime juice, peanuts, mint and fish sauce in a bowl and stir to combine. Set aside.
- Place the chicken, oyster sauce, chilli, ginger, Shaoxing, garlic and coriander in a bowl and toss to coat. Set aside for 30 minutes to marinate.
- Thread the chicken onto skewers.
- Heat a chargrill pan or barbecue over high heat and chargrill or barbecue the chicken for 3-4 minutes each side or until cooked through. Serve with the dipping sauce.
Tip: You could also serve these skewers with sweet chilli sauce or hoisin sauce.
