Stuffed yellow peppers
Use any coloured pepper for this dish, depending on what is available at a reasonable price.
- Cut yellow peppers in half and remove seeds. Wash courgettes and grate. Drain off any excess liquid. Wash apricots and remove stones. Chop apricots roughly. Wash spring onions and slice finely.
- Mix courgettes, apricots and spring onions together. Fill pepper cavities with courgette mixture. Mix tasty cheese, breadcrumbs, nuts, salt and pepper together. Scatter over peppers.
- Bake at 200 degrees C for 20 minutes. Cover lightly and cook a further 20 minutes or until soft and crumb mixture is golden.
