Lemon chicken with stuffing slice
Inspired by stuffed roast chicken. Lemon relish is available at most supermarkets.
- Place chicken pieces in a roasting dish. Drizzle over lemon juice. Sprinkle with thyme, 2 teaspoons lemon rind and salt. Bake at 180 degrees C for 45 minutes or until chicken is cooked. Serve chicken legs with stuffing slice and lemon relish.
- To make stuffing slice: Place breadcrumbs in a bowl with chopped olives (green), chopped parsley, thyme and basil. Peel onion and chop finely. Mix into breadcrumb mixture with salt, pepper and 1 tablespoon lemon rind.
- Add egg and 1 tablespoon lemon juice and combine well. Place mixture in a baking paper-lined 10 x 20cm loaf tin. Bake alongside chicken at 180 degrees C for 35 minutes or until loaf is cooked. To serve, cut into slices.
