
Green salad with chilli mint dressing

Inspired by layered salads. Note: baby spring onions are available in pots in the live herb section of most supermarkets or you can use thinly sliced spring onions.
Ingredients
120 g | Salad greens |
¼ cup | Mint leaves |
¼ cup | Basil leaves |
¼ cup | Spring onion |
Dressing
2 | Red chillies |
3 | Garlic cloves |
¼ cup | Mint leaves |
¼ cup | Fresh coriander |
¼ cup | Avocado oil |
2 Tbsp | Sesame oil |
¼ cup | Mirin |
½ tsp | Iodised salt |
Directions
- Place salad greens in a bowl with mint, basil and spring onions. Drizzle with dressing.
- To make the dressing: Place chillies and garlic in a small ovenproof dish. Bake at 200 degrees C for 15 to 20 minutes. Remove skin and seeds from chillies. Chop chillies and garlic roughly. Place in a blender with mint, coriander, avocado oil, sesame oil, mirin and salt. Blend to combine.
