Walnut Bread, Cheese and Cucumber with Walnut Pesto
- Cut bread into 2cm-thick slices (as an alternative use fruit bread). Cut slices almost through horizontally. Cut cucumber into thin slices. Spread one half of bread with cheese.
- Place two pieces of cucumber on top of cheese. Spread with one teaspoon of walnut pesto.
- Place roasted walnut pieces in the bowl of a food processor. Crush garlic, peel and add to processor with tahini, salt and pepper. Process to just combine.
- Add oil (alternatively use olive oil) and process to a chunky paste.
Tip: Tahini is a paste made from sesame seeds. It is available in most good supermarkets.
