Mini orzo tortillas
- Cook orzo according to packet directions. Drain and leave to cool.
- Wash tomato and spring onions and chop roughly. Mix orzo, tomato, spring onions, cottage cheese, basil, salt, pepper and eggs together. Pour into four, one-cup baking paper base-lined ramekins.
- Place ½ teaspoon of tomato purée in the middle of the mixture. Crumble feta over the tops. Scatter with herbs.
- Bake at 150degC for 40 to 50 minutes or until set. Cool in ramekins for 10 minutes before turning out. Serve with salad and relish.
