Salsa verde with grilled fish
1 small red onion 1 cup parsley sprigs 1 cup mint leaves ½ cup basil leaves 2 cloves garlic 2 teaspoons wholeseed mustard 2 tablespoons lime juice 1 tablespoon drained capers 1 tablespoon oil 4
- To make the salsa verde, peel onion and chop roughly. Place in a food processor with parsley, mint and basil.
- Crush garlic, peel and chop finely. Add to processor with wholeseed mustard, lime juice, drained capers and oil. Pulse to combine.
- Grill fish under hot grill until cooked through and serve with salsa verde.
