Thai tuna salad
( SERVES 3 )
- Cook fresh tuna on a barbecue or in a non-stick frying pan for one to two minutes each side. Remove and refrigerate until cold.
- Crush 2 cloves garlic, peel and place in a blender or food processor with soy sauce, lime juice, fish sauce, sugar, coriander and mint. Blend to combine.
- Slice tuna thinly and mix with sauce. Scatter salad greens over a serving platter. Wash spring onions and slice. Wash tomatoes and cut in half. Place tuna slices, spring onions and tomato over lettuce.
