Curried banana chicken thighs
- Place chicken on a board and if necessary, cut to flatten out.
- Peel bananas and cut in half crossways. Spread curry paste over the inside of each chicken thigh.
- Place half a banana in the middle of each thigh, wrapping chicken around banana.
- Cut rashers in half lengthways and place a rasher over the top of each chicken thigh. Place in a baking dish.
- Bake at 180 degC for 40 minutes or until cooked.
- Serve with warmed naan bread and chutney.
