Pork koftas with choy sum and aioli
Choy sum is flowering Chinese cabbage and available from Asian supermarkets and most good green grocers. If unavailable, replace with spinach or silverbeet.
- Mix pork mince, char sui sauce, soy sauce, egg and chopped coriander together. Form two tablespoons of mixture into egg-shape koftas. Place in a greased baking dish. Bake at 200 degrees C for 15 minutes, turning often, until cooked.
- Wash choy sum. Cook in a pan of boiling water for four minutes or until just cooked and bright green. Drain. Serve koftas with choy sum and aioli (sweet chilli and lime flavour).
