Coconut lunchbox crisps
- Place sugar and two egg yolks in a bowl and beat until pale (save one egg white). Stir coconut and vanilla into sugar mixture.
- Beat one egg white until stiff peaks form. Fold into coconut mixture. Place teaspoonfuls of mixture on a baking-paper-lined baking tray.
- Bake at 150 degrees C for 15 minutes. Lower temperature to 100 degrees C and cook a further 20 minutes. Cool. Remove to a wire cake rack until cold.
