Fish and noodles with spinach
- Cook noodles to packet instructions. Place stock in a saucepan. Peel ginger and cut into matchstick pieces. Add to stock.
- Remove an 8cm strip of rind from lemon and slice rind finely. Add to stock. Heat gently for five minutes.
- Add fish fillets. Simmer for three to four minutes or until fish is cooked. Wash spinach and add to broth. Cook a further two minutes.
- Serve fish, noodles and spinach with broth poured over. Sprinkle with coriander and toasted sesame seeds.
