Tomato, bean and chorizo soup
- Peel onion and chop finely. Crush garlic cloves. Heat oil in a large saucepan and cook onion and garlic for 10 minutes over a slow heat.
- Add tomatoes and stock. Bring to the boil, reduce heat and simmer for five minutes.
- Slice sausage finely and stir into soup with chilli beans. Simmer a further 10 minutes. Serve in bowls sprinkled with chopped fresh coriander. Serve with crusty bread.
