Rice flour-dipped fish with kumara wedges
|1 tsp||Iodised salt|
|½ cup||Rice flour|
|2 Tbsp||Lemon juice|
|½ cup||Soda water|
|1 to fry||Oil|
- Scrub kumara and cut into wedges. Heat oil in a baking dish. Add kumara wedges and sprinkle with salt. Bake at 200 degrees C for 20 minutes, or until cooked and golden, turning wedges during cooking time. Cut skinned and boned fish fillets into long pieces. Mix rice flour, lemon juice and soda water together until a smooth batter.
- Dip a piece of fish into batter. Add to hot oil and cook until golden and cooked through. Stir batter before adding each fish fillet. Serve fish and kumara wedges with salad and tartare sauce.
To prepare Tartare sauce:
- Mix mayonnaise, capers, chopped gherkins and lemon juice together.
