Lemon and caper stuffed chicken
- Cut a pocket in the side of each chicken breast (skinned and boned).
- Mix fresh breadcrumbs, chopped parsley, 1 tablespoon lemon rind, drained capers, 2 tablespoons lemon juice and pepper together. Fill each pocket with stuffing mixture. Sprinkle with lemon pepper.
- Place chicken in a baking dish. Cover and bake at 180 degrees C for 20 to 25 minutes. Slice and serve with steamed broccolini and red pepper relish.
