- Remove rind from bacon and grill bacon until crisp. Chop roughly. Hard boil eggs for 10 minutes. Drain and refresh under cold water. Shell eggs and cut into quarters. Chop pistachio nuts roughly.
- Drain anchovies. mash with lemon juice and pepper and stir into aioli.
- Arrange spinach leaves and salad greens in serving bowls. Top with eggs, bacon and pistachio nuts. Drizzle over anchovy dressing.
