Potato gnocchi with asparagus, bacon
To prepare Potato gnocchi with asparagus, bacon:
- Remove rind from bacon and grill bacon until crisp. Wash asparagus and break off woody ends. Cut each spear into slices on the diagonal.
- Simmer asparagus for four minutes. Drain. Cook gnocchi according to packet directions. Chop bacon roughly.
- Drain gnocchi and serve with asparagus and bacon. Drizzle over lemon drizzle.
To prepare Lemon drizzle:
- Melt butter. Mix in 2 teaspoons grated lemon rind, lemon juice, salt and pepper.
