Mini Thai fish cakes
- Preheat oven to 200 degC. Cut the fish into small pieces and place with all the other ingredients in a food processor.
- Using the pulse button, process the mixture until smooth.
- Spray three trays of mini-muffin tins with nonstick baking spray and spoon a heaped teaspoon of mixture into each hole.
- Bake for 12 to 15 minutes until puffed and golden brown.
- Cool on a wire rack. Serve with sweet chilli sauce to dip.
