Jill's Christmas fruit cake
- Combine nuts and fruits. Sift over flour, baking powder and salt. Mix in sugar. Add vanilla and brandy to eggs. Beat to combine.
- Add to fruit mixture. Blend well. Mixture should be stiff. Spoon into a greased 23cm ring tin and smooth top.
- Brush with chunky marmalade.
- Bake at 140C for one hour.
