Soba noodle and shiitake mushroom salad
Soba noodles are available from Asian food suppliers.
|100 g||Shiitake mushrooms|
|250 g||Soba noodles|
|3 Tbsp||Sesame seeds|
|½ tsp||Chinese five spice|
|¼ cup||Fresh coriander|
- Cook noodles according to packet directions. Drain. Cut mushrooms in half. Crush garlic, peel and chop finely. Heat oil in a frypan.
- Add garlic, mushrooms and five spice powder. Stir for two to three minutes. Cool. Mix noodles, mushrooms, sesame seeds and dressing together. Sprinkle with coriander.
To prepare the dressing:
- Mix chilli, ginger, soy sauce, sesame oil, peanut oil and lemon juice together.
