Tropical fruit platter with star anise syrup
- Arrange the fruits; sliced deseeded watermelon, melon, pineapple, peeled and sliced mango, green lemon, 2 cans of drained lychees (make sure to reserve the syrup) on a platter and chill well. Mix the lemon juice, reserved lychee syrup and star anise in a microwave jug.
- Cook on high until the syrup boils, stirring a couple of times. Allow the mixture to cool completely then chill. Just before serving, strain the juice over the fruit platter, adding a few star anise pods as garnish.
