Raspberry sorbet with poached pears
To prepare Raspberry sorbet:
- Place raspberries, sugar and lemon juice in the bowl of a food processor. Process until combined. Place in a freezer-proof container and freeze for two to three hours.
- Break up and process again. Refreeze. Serve sorbet with poached pears.
To prepare Poached pears:
- Peel pears. Cut in half and remove cores. Place sugar, water, basil and pear halves in a large saucepan. Simmer for 30 minutes.
- Place pears in a serving dish. Strain syrup and discard basil. Pour syrup over pears.
