Ginger, apricot and almond chocolates
- Chop apricots, ginger and roasted almonds roughly and place in a bowl. Melt 70% cocoa chocolate in the microwave or in a bowl over a saucepan of simmering water. Do not let the water touch the sides of the bowl. Remove from heat and stir chocolate into apricot mixture.
- Place tablespoonsful of mixture on baking paper and leave to set. Store in a cool area.
