Red pepper, chilli and garlic relish
( SERVES 3 )
- Cut peppers in half and remove seeds. Cut each half into quarters and place in the bowl of a food processor. Cut chillies in half and discard seeds. Peel onions and chop roughly. Crush garlic and peel. Place chillies, onions and garlic in processor with peppers and process until finely chopped.
- Place in a non-metallic bowl with the salt. Leave for two hours. Pour into a sieve and wash well under cold, running water. Drain. Place in a saucepan with sugar and vinegar. Bring to the boil and simmer for 45 minutes. Spoon into hot, clean jars and seal.
