Rice wraps with prawns and lettuce
|½ cup||Fresh mint|
|250 g||Cooked prawns|
|2 Tbsp||Lime juice|
|18||Rice paper wrapper|
- Place noodles in a large bowl and pour over boiling water. Leave for five minutes. Stir occasionally to separate noodles. Drain and refresh under cold running water. Drain well. Wash mint and coriander leaves. Drizzle prawns with lime juice. Wash cucumber and slice finely lengthways.
- Dip a rice-paper wrapper into a shallow dish of warm water until just soft. Place on a clean bench. Place a few noodles, herbs, four prawns and a slice of cucumber in the middle of each wrap. Fold wrapper around prawn mixture to form a parcel.
- Repeat with remaining wrappers and prawn mixture. Cover rolls with a damp tea towel until all have been completed. Dip in sauce to eat.
To prepare Sauce:
- Mix chilli sauce, soy sauce and lime juice together.
