1 red onion 2 courgettes 2 red peppers 3 tablespoons olive oil 4 skinned and boned firm fish fillets 400g can Italian chopped tomatoes ½ cup cooked rice 100g feta cheese Peel onion and chop finely.
- Peel onion and chop finely. Wash courgettes and slice. Wash peppers and cut in half, then remove seeds and chop flesh roughly.
- Heat oil in a frying pan and toss onion, courgettes and peppers for four to five minutes.
- Cut fish into 6cm pieces and add to vegetables. Pour over tomatoes and scatter over rice.
- Cook over a gentle heat for four minutes. Just before serving, crumble over feta.
